Starter 1: roasted King crab with soja milk Yuba

Appetizer plate: this is truly a highlight. An explosive platter of tastes.
- Oysters cooked in ginger
- Tuna tatar with jam
- Fried bamboo shoots with shrimp
- Steamed egg
- Pickled Myoga-ginger in sweet vinegar
- Soft blanched Nameko mushroom
- Squid with miso and young Sansho pepper leaves

A delightful plate of the most mouth-melting sashimi I've ever tasted in my life

Course 4:
Fried Rotbrasse fish in sweet Teriyaki sauce with jam roots & sweet potato

Course 5
Beef filet and fried Bamboo sprouts in Sansho pepper butter and Asparagus tempura

Rice cooked with Sakura shrimps and bamboo shoots, accompanied with Miso soup and pickles
